Kudos in a flash

“Thanks, Mom. That was good.” A rare but welcome comment on Meatless Monday. So what went right? It was worth introspection, given the recent hue and cry over vegetarian meals:

1- Fresh local ingredients. Wild Alaskan sockeye salmon fillets. Fresh baby bok choy.

2- Limited time. With only¬† 20 minutes to slam together a meal before heading out to a school meeting, I didn’t have time to fret about whether the boys would like it. In my haste I thought I had undercooked the salmon which meant it turned out exactly as intended — seared skin, tender pink inside, juicy.

There was no time to snap a photo but picture this:

Salmon with lemon-cilantro vinaigrette, over couscous

Baby bok choy braised in garlic and chicken broth (oops, there goes Meatless Monday)

Spinach salad with pear and gorgonzola
